Butternut Squash Risotto Recipe

A simple, beautiful and delicious recipe from Alyson Mance.

1 1/2 c. arborio rice

3 c. cubed butternut squash (about 1/4-in thick cubes)

5 c. chicken broth

2 tbsp. chopped fresh sage

1/4 c. chopped fresh parsley

2 garlic cloves, chopped (about 2 1/2 tsp. garlic)

1/4 c. chopped shallots

3/4 c. parmesan cheese

2 tbsp. olive oil

salt and pepper to taste
