Sweet Potato Burger with Marinated Lemon Kale

Ditch the buns and beef and try Erica Lewis‘ favorite super-healthy, vegan, gluten-free burger and salad recipe! 

Burger:

2 cups peeled, cooked and mashed sweet potatoes
1/3 cup quinoa
1 cup water
2 tablespoons butter/buttery spread
2 tablespoons maple syrup
1/8 teaspoon cinnamon
1/8 teaspoon nutmeg
1/8 teaspoon allspice
½ cup dry roasted pecans, chopped
½ teaspoon sea salt

Lemon Kale:

1 bunch of kale
1 medium lemon
1 clove garlic, finely chopped
1-2 tablespoons extra virgin olive oil
salt to taste
