Raw Vegan Tacos

Holistic health coach Sally Graves shakes up Taco Tuesdays with a raw, vegan version of your favorite Mexican dish. Your waistline will thank you!


6 lettuce leaves
1 cup raw walnuts
1 tablespoon coconut aminos (or soy sauce)
1/8 teaspoon ground chipotle pepper
1 teaspoon ground cumin
1 teaspoon olive oil

Cashew Sour Cream

1 cup raw cashews
juice of 1 lemon (about 1/4 c. lemon juice)
2 teaspoons apple cider vinegar
1/3 tablespoon water, more if needed


1 cup cherry tomatoes, quartered
1/2 red bell pepper, chopped
1/2 yellow bell pepper, chopped
1/2 red onion, minced (about 1/2 c.)
1/4 c. chopped cilantro
1/2 clove garlic, minced
juice of 1/2 lime
1 tsp. raw honey, coconut nectar or agave
1 tablespoon olive oil
pinch of sea salt
