Quinoa with Coconut Veggie Medley

KalaLea makes vegan bellies happy with her creamy quinoa bowl recipe! For a non-vegan option, top with sautéed shrimp or chicken for added protein. 

Quinoa:
1 cup quinoa
2 cups water

Veggie Medley:
1 tablespoon sunflower oil
12 green beans, cut into thirds
2 carrots, chopped
small pinch of cumin seeds
1 teaspoon dried basil leaves
1 dried chili pepper
1/2 teaspoon paprika
1 teaspoon onion powder
1 tablespoon fresh chopped parsley
3-4 cloves garlic, finely chopped
1/4 fresh red pepper, chopped
1/4 cup finely chopped purple cabbage
1/2 cup coconut milk
1 heaping tablespoon tomato paste
1/2 teaspoon sea salt
